Description:
Tannat is a rare red grape, probably Basque in origin, principally grown in the Madiran region of France (Pyrenees foothlls) and in Uruguay. It is now also grown in California, where it produces a full-bodied, intensely colored, ruby red wine, wonderfully flavorsome, with highlights of spice, plums, ripe berries and smoke.

Caymus Vineyards produces two Cabernets Sauvignons – a "Napa Valley" and the venerable "Special Selection." Both Cabernet bottlings have aromas and flavors which can only be achieved through "hang time" – a technique which chances the loss of crop if early winter sets in. Leaving the fruit to "hang" on the vine unusually long develops suppleness, increases color, and matures the tannins of the grapes. The wines are abundant in textural tannins yet soft as velvet. Crop thinning, allowing measured sunlight to reach the vine's fruit zone, and waiting for increased ripeness are all part of our viticultural practices. Caymus Cabernets offer a wide array of aromas and flavors including cocoa, cassis and vanilla. Caymus Special Selection is the flagship wine of the Wagner family and is comprised of the very best barrels of the vintage. This wine is not produced in difficult years. Caymus Napa Valley is more representative of a standard Cabernet of Napa Valley, as it is a bit less precocious than the Special Selection, but still delivers big. Our signature 2010 Mt. Veeder Cabernet Sauvignon comes from a vineyard with high elevation, with a steep slopes and sedimentary clay and volcanic soils that restrict the root growth, which is producing grapes with small berries and intense fruit flavors. This Napa Cabernet has aged in French oak barrels for 36 months, from which 50% is a new oak. True to the Mount Veeder appellation, this wine possesses dark blueberry, cassis and blackberry concentrated fruit flavors and bold well integrated tannins. A hint of the mountain forest, cedar and rich French oak also combine these aromatics and flavors to create this massively rich full -bodied Cabernet Sauvignon. This cult Napa Valley Cabernet Sauvignon should evolve over the next 20 years.

Description:
Two terraced vineyards, planted in 1997 have created our Bevilo wine, composed of 90% San Giovese Grosso, 10% Cabernet Sauvignon and Merlot. Early summer, the careful removal of bunches of grapes reduces the yield per plant and increases the quality of the wine.The spontaneous fermentation with natural yeast, present in the vineyards, and an approximate two week maceration of the must contributes to the fruity character of the wine. During fermentation the temperature is limited to 27-28°C. After fermentation the wine is transferred to 400 litre aged french oak barrels where the malolactic fermentation takes place. Careful evaluation of the intrinsic character of the young wine will decide how long the three varieties will stay in the barrels. After 2 years the wine is blended and bottled. The wine is allowed to mature another four months in the bottle before it is ready to be enjoyed. Though it is ready to be drunk in 2011 it will reward up to eight years in the cellar.
